Flapjacks
- 150 g oats
- 50g soft brown sugar
- 50g non-salted butter or margarine
- 2 x 15ml (tbls) golden syrup
- 75g dried fruit (sultanas, cranberries, rasins, sliced apricots etc ...)
- *1 tsp cinnamon/mixed spice (optional)

Method:
- Preheat over to 200C/Gas mark 6
Grease a shallow baking tray and line with greaseproof paper* - Place the syrup, butter and sugar into a small saucepan and heat slowly until butter is melted
- Stir in the oats & Cinnamon/mixed spice*
- Pour ½ mixture into tin
- Top with the dried fruit
- Add the remaining oat mixture over the dried fruit
- Pat the mixture down
- Bake for 20 mins until lightly browned
- Cut into portions while hot but leave to cool before removing from tin
* I find that if I spray the tin with - BakeEasy Spray I don’t need the greaseproof paper – I just turn the tray out onto a plate/another tray and they pop out easily (once cooled)
Plain Cookies
- 650g Plain Flour
- 1 tsp. baking powder
- 240g Butter
- 250g Caster Sugar
- 1 egg
- 1 tsp. vanilla extract or chosen flavouring
- 1/2 tsp. salt

- Preheat your oven to 180C /350F It is important that your oven is at temperature before the cookies are place in.
- Cream the butter and sugar until light and fluffy. Add eggs and vanilla. Mix well. Mix dry ingredients and add a little at a time to butter mixture. The mixture is complete when the dough comes together and there are no crumbs.
- Wrap the dough in clingfilm and chill for 1 to 2 hours.
- When your oven has reached temperature roll out the dough to desired thickness 1cm is generally a good guide and cut into desired shapes with your Cookie Cutter.
- Place on a good quality non stick baking tray and bake for about 10 minutes or until the edges of your cookies begin to turn brown.
- Leave to cool on a cooling rack and decorate as desired.
Rock Cake
- 250g Self Raising Flour
- ½ tsp mixed spice
- 90g soft brown sugar
- 125g raisins
- 90g unsalted butter
- 1 medium egg

Method:
- Preheat the oven to 200C/400F
- Lightly grease baking tray
- Mix together the flour and spice and rub in the butter until it resembles fine breadcrumbs
- Mix in the sugar and raisins.
- Add the beaten egg and combine all the ingredients
- Place onto the baking tray in rocky type heaps.
- Bake for 15 mins
Gingerbread Men
- 75g (3oz) golden syrup
- 65g (2 ½ oz) caster sugar
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- 65g (2 ½ oz) butter
- 1 tsp bicarbonate of soda
- 2 tsp water
- 1 egg, beaten
- 300g (10oz) plain flour

Method:
- Preheat the oven to 220C / 425F
- Put the golden syrup, sugar and spices in a heavy based saucepan and heat gently, stirring.
- Add the butter and stir until melted.
- Leave to cool for 10 minutes
- Dissolve the bicarbonate of soda in 2 tsp of water. Add to the syrup mixture with the egg and the flour.
- Stir well and mix to a smooth dough
- Wrap in clingfilm and leave to rest in a cool place for 1 hour
- Roll out the dough on a lightly floured surface to a 3mm thickness
- Cut out men or other shapes using cookie cutters and place on a lightly greased baking sheet
- Bake for 10-15 mins until golden brown
- Leave on the baking sheet for 1 minute then loosen the biscuits with a palette knife and transfer to a wire rack to cool.
- Decorate with icing if desired.
Peanut Butter Cookies
- 1 Cup Peanut Butter
- 1 Cup Caster Sugar
- 1 Egg

Method:
- Mix all ingredients together
- Roll into little balls and place on a greased baking tray
- Press down lightly with a fork (dipped in sugar)
- Bake in a preheated over at 350F for 8-10 minutes
Chocolate Chip Cookies
- 1 cup butter
- ½ cup white sugar
- ½ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1-2 cups chocolate chips

Method:
- Preheat oven to 350F
- Cream the butter
Add the sugars, eggs, vanilla and cream together - In a separate bowl mix the flour, salt, baking soda and mix together
- Add dry ingredients to the butter mixture and mix together
- Add the chocolate chips
- Place well apart on a greased baking tray and cook for 10-12 mins
